- Place the ribs in a large pot with salted water to cover.
- Bring to a boil, and then reduce the heat to low, and simmer for about 10 minutes, skimming off any foam that rises to the surface.
- Add the onions and sliced potatoes, and cook for another 20 minutes.
- Adjust the seasoning with salt and pepper, and then add the potato chunks.
- Cover and simmer for about 2 ½ hours, stirring occasionally.
