Bison roast

4 to 5 pounds

Garlic pepper

Seasoning salt

- Preheat the oven to 325°F; ensure a rack is in the middle.
- Rub with seasoning salt, and then pat with garlic pepper.
- Place in roasting pan, add 1 inch of water, cover, and cook for approximately 2 ½ hours.
- Reduce the oven temperature to 175°F, and let the roast rest until ready to serve, about 2 hours.
- Using drippings for gravy or serve au jus.
