- Preheat 425°F.
- In a medium saucepan, bring the water and salt to a boil.
- Add and melt the butter.
- In a small bowl, toss the flour, mustard, and cheese together.
- When the mixture is close to a boil again, add the cheese mixture.
- Reduce heat to medium-low, and stir the mixture until it holds together in one mass, the texture is smooth, and it pulls away from the sides easily, about 1 to 2 minutes.
- Remove from heat, and cool for 5 to 10 minutes.
- Beat in the eggs, one at a time, until the dough has completely incorporated them.
- Scoop onto a greased baking sheet, and bake for 20 minutes or until they puff up golden brown.
