- Preheat the oven to 425°F.
- In a 3-quart baking dish, toss the mushrooms with the sweet potato fries and oil; bake for 45 minutes.
- In a saucepan, melt the butter, stir in the flour, and cook, whisking, until golden, about 5 minutes.
- Whisk in the milk and cook, whisking, until thickened, about 3 minutes; season with salt.
- Spoon the gravy over the mushrooms.
- Top with cheese.
- Broil until golden.
